I don't feel like writing an entire post so I am going to give short updates today instead. 

*It is Halloween weekend!  We still haven't decided on costumes yet...we are slackers.

*I'm watching "I didn't know I was Pregnant".  This show is so can you possibly NOT know you are pregnant?!

*UMF cheering has been going very well lately!  I'm getting so excited for our competition season and the routine is really coming together now.  That being said...last night I was working on my double twist and went early.  Now I have a cut and fat lip.  Riiight in time for Halloween.

*I just had to preregister for my FINAL semester at UMF.  I start student teaching January 18th.  CRAZY.

*We think Daisy has fleas.  I have no idea how this happened as she doesn't ever see other animals.  :(  Last night we sprayed her with flea stuff and I think we traumatized her for life.

*J and I are taking my brother to see J Cole and Ludacris at UMO on November 9th.  We are so excited!

*We saw Paranormal Activity 2 and I almost peed my pants.  Scariest movie I have ever seen for sure. 

*In my art class we are making paper mache animals.  I am making a porcupine.  Yes this is what I learn in college.

*I've been teaching math to Kindergartners two days a week and am already falling in love with my class.  I cannot wait to be a full time teacher :)

*J has to close at work tonight and I'm super bummed about this because we wanted to go to the Halloween dance at school.

Being happy...


So, I am super bummed right now.  I was supposed to have the weekend off from work for literally the first time in months.  Unfortunately, I found out that they need me to work instead and I have to work at 7 am today, tomorrow, and Sunday.  UGH!  COME ON!  As you know, I love my job.  What you might not know is I HAAAAATE early mornings.  HATE THEM.  Unfortunately, my job tends to have me up at 6 am (earlier if I want to look cute) 5-6 days a week.  This weekend off meant the opportunity to go out with my friends and not have to suffer as a result with very few hours of sleep.  It also meant the ability to sleep in and be lazy with my fiance-something we both love but never have time for anymore.  :( Lameo.  I just need to keep reminding myself that we really need the extra money so I can suck it up.  I want a beautiful wedding *repeats* I want a beautiful wedding!

Anyways, enough complaining for one post.  Today J and I went to a Diversity Conference on campus for a few hours.  I was required to go for one of my classes but being the nerd I am, I was glad to be there!  I love hearing passionate speakers talk about subjects I'm interested in or ideas that will help me to be a better teacher in the future.  We even bought the book written by the Key Note speaker and had him sign it :)  It was fun!

In true Halloween spirit, I am getting in the mood to watch some scary movies!  Josh and I LOVED the first Paranormal Activity movie and literally barely slept for a few nights after seeing it in theaters last year.  The second one came out last night and we totally want to go see it ASAP.  I am pumped!  I also love the Saw movies (even though I think they have definitely gone down hill since the first two) and am planning on seeing the new Saw in 3D.  Hopefully neither of them disappoint! 

This week I started teaching in a Kindergarten class for my Teaching Math class.  For the rest of the semester instead of having class twice a week we volunteer in a math class for two hours a week and meet with cohort groups for one hour a week.  I was placed in a Kindergarten classroom about twenty minutes away from campus and I am having so much fun already!  I didn't feel I was learning ANYTHING in the class before this, so the opportunity to be in the classroom now instead is much more fulfilling as an educator.  I have fourteen students in my classroom and though I have only met them twice so far, I am already loving them!  I can't wait to go back on Tuesday!

The cheerleaders I coach have their 2nd to last game this Saturday!  I cannot believe the season is already almost over.  However, I must admit that I am excited to have a little commitment taken out of my days again.  I am currently coaching Tuesdays 2:30-4:30 and Wednesday 6-7:45 (20 mins away).  We also have games most weekends on Saturdays that we have to be at for at least 3 hours (we require the girls to be there an hour before the game starts to practice and get organized).  I have UMF cheering practice Sundays 8-9:30, Mondays 7-9, and Wednesdays 8-9:30.  If you didn't notice, that means my Wednesdays are driving straight from coaching to practice and getting there late.  I usually have to bring my dinner to coaching so I don't pass out flying at practice.  This doesn't even include work and classes!  I really do love being busy but having a little break before student teaching will be nice too.

21! Apples! Cooking!

I am finally twenty-one years old!  I am literally one of the very last people in my grade to turn 21, so this is a big deal.  No more missing out on fun nights because of my age!  Waahooo!  However, I have to admit that I am a very boring 21-year-old.  I have only bought a few drinks so far-lame.  In my defense, I'm not a fan of having to wake up at six in the morning after a night out (and I ALWAYS work at 6 am).  Oh well.  Friends: I promise to try to be more adventurous/21ish.  On that note, my friends and family helped me to have a fabulous birthday!  I am so blessed to have received multiple cards and gifts from loved ones.  They were all extremely appreciated and I feel so loved!  I am unfortunately still trying to catch up on my birthday dinners.  (Damn that busy schedule of mine!)  (P.S. have you figured out that I love using parenthesize yet? Have ya?)  Mom and nana came to Farmington and took Josh and I out to lunch today and it was great to see them!  Daddy and Griff are coming tomorrow for the FIRST time since we have been in our apartment, so I am excited for that too! 

I went to a wedding with Josh's family and we had so much fun!  It is the first wedding I have been to since being engaged so it was nice for Josh and I to see what we liked and didn't like about the night.  We took lots of mental notes! 

We also went apple picking last weekend!  We went to an awesome apple orchard that Josh's family always goes to and it was really fun!  They gave us a hay ride down to the trees and even sold homemade apple cider donuts (SOOO GOOD!), apple cider, apple pies, etc.  We also chose a pumpkin to bring back to his parents.  

We made the BEST apple dumplings with some of the apples!  Here is the recipe in case you are interested.  I definitely recommend them!

Apple Dumplings

2 medium sized apples
2 cans crescent rolls
2 sticks butter (we used low fat margarine)
1 1/2 c. sugar
1 tsp. vanilla
cinnamon (for sprinkling)
12 oz. (1 can) Mountain Dew or Sprite. (WEIRD I KNOW!)

Preheat oven to 350. Spray a 9x13 pan with non-stick cooking spray. Peel apples and cut into 8ths. We used an apple corer/peeler (which slices the apples for us).  Cut the cored, peeled, sliced apple in half, and then divided each apple into 8ths.

Open a can of crescent roll dough and carefully separate the dough along the perforations. Place 1/8 of an apple on one segment of dough and then roll/wrap the apple in the dough. Place in the prepared pan and repeat with remaining apples and dough. Set aside.
In a medium saucepan, melt butter and add sugar and vanilla. Stir to combine. Pour butter/sugar mixture over the apples, then pour the can of Mountain Dew (or Sprite, although I've never actually tried it), on top of everything. Sprinkle the pan with cinnamon and bake for 40 minutes.

 When the dumplings are done, remove from oven and serve with a ladle-ful of sauce. They are small but one at a time was definitely enough to fill me up.  Vanilla ice cream is practically a requirement :)

I know it is a verrrry unhealthy recipe, but I promise it is worth it.  Also, next time we would probably half the butter and sugar and I think it would still be as good.
